Capstone California is a brand new course fully dedicated to Californian wines. Created by California Wine Institute the program offers four levels of study, from novice to expert.  
The Wine Hub is an official Capstone provider for level 1 & 2.

Capstone level 2

Malmö

The Intermediate Level 2 course builds on Level 1 with a full day of wine curriculum and an additional tasting of 16 wines. For the theory, you will cover important events in California’s wine history timeline and identify key figures who helped shaped the state’s wine industry. 

You will also learn about important geographical factors in major California regions, as well as taking a deeper look at California’s key grape varieties.
You will build understanding about the annual life cycle of the vine, winemaking fundamentals, and the region’s different AVAs.

Capstone level 2?

Capstone level 2 is aimed at those who have completed Capstone level 1 and want to immerse themselves even more in the wine region of California and its wines.

You will

Learn about

Key events in California wine history and identification of key figures who helped 
shape the state’s wine industry. 

Learn about important geographical factors in major California regions such as rivers,
dry creeks and important mountain ranges including the Coastal Range, Mayacamas Mountains, the Vaca Range and Santa Cruz Mountains.

Take a deeper look at seven of California’s key grape varieties by exploring the
growing regions where they are grown and their distinctive taste profiles.

Build understanding about the annual life cycle of the vine and related 
terms including: flowering, bud break, véraison, trellising, pruning, green harvest,
harvest timing and more.

Learn winemaking fundamentals and explore cooperage variations
(French vs. American vs. other European oak) and how wine style is affected
by oak selection.

Delve deeper into historic AVAs in Lodi and the Sacramento Delta,
Mendocino County, Paso Robles, San Luis Obispo County, Monterey County
and Santa Cruz Mountains.

Course step by step

How it works

Capstone California Wine Certification Program level 2 consist of several chapters
covering history, lore, geography, climate, soils, grapes, viticulture, vinification, aging
and maturation, wine laws, official classifications, producers, vintages, and the business
of wine. 

Level 2 is a full day classroom course that covers theory, tasting and exam.
The exam will be done during the end of the day and consist of multiple choice questions.

Study time

No preparation or study time needed. However, you need a fundamental knowledge about wine, viticulture, vinification and the international wine business.
