Capstone?
Capstone California is a brand new course fully dedicated to Californian wines. Created by California Wine Institute the program offers four levels of study, from novice to expert. Each builds on the level prior, and covers history, lore, geography, climate, soils, grapes, viticulture, vinification, aging and maturation, wine laws, official classifications, producers, vintages and the business of wine.
The different levels will be done in classroom and each level takes a day to complete. The course is comprised of theory, tasting and an exam. During Level 1 students will be tasting 8 wines whereas Level 2 students will taste 16 wines.
This course is an amazing opportunity to learn more about California and
its wines. You will learn all the classical appellations such as Napa Valley, Sonoma and less known areas such as Lodi and Santa Cruz Mountains.
The course is conducted in english.

Capstone
The Wine Hub is one the official Capstone certification program provider in Sweden, delivering 2 of the 4 levels available:
- Capstone certification level 1
- Capstone certification level 2
Regardless of your level of knowledge, you need to study level 1 in order to study level 2.
Level 1
The Introductory Level 1 covers a full day of wine curriculum, beginning with major eras in the history of California wine. As a Level 1 candidate, you will learn how California’s geography, the Pacific Ocean and mountain ranges affect viticulture and wine styles. You will also acquire fundamental knowledge of grape-growing practices and the specifics of viticulture compared to other agriculture, including the ability to identify and describe the important grape varieties grown in California.
Level 2
The Intermediate Level 2 course builds on Level 1 with a full day of wine curriculum and an additional tasting of 16 wines. For the theory, you will cover important events in California’s wine history timeline and identify key figures who helped shaped the state’s wine industry. You will also learn about important geographical factors in major California regions, as well as taking a deeper look at California’s key grape varieties. You will build understanding about the annual life cycle of the vine, winemaking fundamentals, and the region’s different AVAs.
Our lecturer
Hans Wejnefalk Larsson is the official Capstone educator in Sweden. Hans trained as a sommelier at the age of 18 and has since worked in France, Australia, England in vineyards and
fine-dining restaurants to deepen his knowledge. Today he is aiming for both the Master Sommelier and Master of Wine degrees.
